Our tour in two parts: firstly we take guests on a walking tour of the markets and streets meeting the producers and vendors; we then invite guests back to our private room in the Ancient Town to taste what we consider are quality examples of this food bought directly from the producers – most of whom we see or meet on the tour.
We already see the Vietnamese diet changing – becoming less traditional. Over time many of the local foods could well disappear as producers look towards foods they feel may be more relevant to the changing market. The purpose of our business is to assist in the sustainability of the authentic local Vietnamese foods for the enjoyment of future generations – both visitors and locals.
